The Food and Beverage team of Café G has put their best foot forward for a delightful experience of lost cuisines from different cities and cultures in India, starting from the North West Frontier, Delhi, Bengal, Bihar, and more.
Umesh Dalal, Director- Food & Beverage, Crowne Plaza Gurugram explains, “The festival is a culmination of carefully chosen lost recipes of different regional communities in India along with months of hard work with Chef Nilesh and team. So after a lot of research and chai sessions, we decided to showcase the culinary heritage that Grand Trunk Road could offer. While it is very tough to capture the entire region in one food festival, our kitchen team has mastered a small selection and brought it together as Grand Trunk Culinary Trail.”
The best part of the festival is that it covers Northern Frontier, Undivided Punjab, Old Delhi, Undivided Bengal and a couple of more cuisines. For instance, the undivided Bengal offers - Kosha Mangsho, Alur Chop, seem dhoney pata chorchori, Paturi Maach, a few of the delicacies that the chefs have crafted; Bihar cuisine includes Machali, Jhor wali macchi, bhunja meat & the signature litti chokha; Awadh expedition includes Barrah Kebab, Baoli Handi, Kham Khatai, Mewe Makhane ka quarma , Galouti Kebab and more.
