Tappa From Lite Bite Foods Plans to Expand in India and Abroad

IN THE recent food trends, fusion recipes are surely taking a front seat. Lite Bite Foods, a food and beverage retail company keeping the trend in mind, recently launched Tappa that offers progressive Indian cuisine prepared with the modernized concept to appeal to patrons who have a global palate. After receiving positive feedbacks in the last six months, Tappa now aims to expand in its food and drinks menu. BW Hotelier spoke to Rohit Aggarwal, Director at Lite Bite Foods for Tappa who briefed us about the brand and plans for future. “Since it has been really well received in both the cities Mumbai and Delhi, we now plan to expand to other cities and would also like to explore avenues to take the brand global,” he started with.

According to Aggarwal, the uniqueness of Tappa lies in the menu, which focuses on curating dishes using seasonal produce. “Even the drinks menu, with the bitters made in-house, offers something very unique. Making of the bitters is a process that takes from 10 days to several months to years based on the combination and intensity of and is something we are very proud of,” he further added.

For the sourcing, the restaurant relies on the modern usage of technology like SAP (Sourcing and Procurement). The management has also adopted the green supply chain management system. “This enables us to go a step further to source spices from Kerala and masalas from the choicest of vendors in Bikaner. Our logistics system also ensures minimal wastage of food and resources,” Aggarwal told us.

Aggarwal feels that in the restaurant business, it is vital to offer distinctness to a restaurant in order to retain patrons in addition to an excellent food or beverage menu, skilled staff and an alluring ambience. Being consistent with the quality and presentation of food and service helps in converting occasional guests to regular ones.

Located in one of the busiest corporate hubs of Mumbai- Kamala Mills, Tappa’s patronage includes corporates over lunch, dinner and drinks and revellers over the weekends for dinner and cocktails. Tappa boasts some of their dishes like Haleem Khowsuey, a Riceless Biryani and Avocado Cheesecake.
