Zilos Jeddah appoints Chef Santanu Brahmachary as Executive Sous Chef

In his new role, he will lead a diverse team of 35 chefs and aims to introduce innovative dining experiences

Zilos Jeddah has announced the appointment of Chef Santanu Brahmachary as the new Executive Sous Chef, bringing nearly 20 years of culinary experience to the role. Chef Santanu has worked in various culinary environments, specialising in fine dining and global cuisine. His most recent position was alongside Chef Pino Lavarra, a two-Michelin-starred chef, where he contributed to enhancing culinary standards.

His career includes leadership positions in luxury resorts and high-end dining establishments across India and the Middle East, focussing on modern cuisine trends and sustainability. He has a strong background in managing large-scale culinary operations, including a role overseeing five food and beverage outlets in the Maldives, catering to over 1,000 guests daily and leading a team of 132 chefs.

Chef Santanu expressed his excitement about the appointment commenting, “I am thrilled to join the talented team at Zilos Jeddah and look forward to bringing the flavours of the world to this vibrant city. Together, we will create exceptional dining experiences that reflect my passion for fine dining and culinary innovation.”
