CHEF PAVAN Chennam has been appointed as the Executive Chef of Conrad Pune w.e.f February 2018. A proficient chef with an experience of over a decade in the hospitality industry, Chef Pavan brings an honest and practical approach to the F&B business at the hotel.
As the Executive Chef of the property, Chef Pavan and his team of chefs will be responsible for the overall functioning of the restaurants, employee management, quality control and revenue management at the hotel. He will be responsible for the entire functioning of the F&B system from Menu planning, food festivals, F&B Calendars, recruitment, training and motivation of employees.
Chef Pavan started his career as a Kitchen Executive Trainee with ITC Maurya and worked his way up the ladder with various properties at the prestigious ITC Hotels followed by Marriott Hotels across India respectively. Prior to joining Conrad Pune, Chef Pavan was the Executive Chef at Goa Marriott Resort and Spa where he was responsible for the reorientation of the Chinese Restaurant into Pan Asian resulting in a 150% growth in revenue for the hotel and improved YOY guest satisfaction scores.
Chef Pavan has also been instrumental in setting up the kitchen and creating Marriott Standard during the pre-opening phase of Courtyard by Marriott and Fairfield Marriott, Bengaluru. He was also the pre-opening chef of JW Marriott Delhi Aerocity and set up the coffee shop K3 which is ranked as the No.4 restaurant in India today.
He has also worked with some of the industry greats such as Chef Imtiaz Qureshi, Chef Farooque- ITC Hotels, Chef Chalapathi Rao- Dakshin. He also played a pivotal role in the opening of the Akira Back restaurant at the JW Marriott Delhi Aerocity (Classic Korean-Japanese food) in liaison with Chef Akira Back(Michelin-2*), Chef Kurt Micheal and Chef Jason Oh (Yellow tail, Las Vegas). He has also showcased his culinary prowess in multiple high-profile Goan Weddings and had the privilege of rustling up the banquet during housewarming ceremony of Mr. Mukesh Ambani.
He has completed his Bachelor’s Degree with a culinary degree course at Culinary Academy of India- Hyderabad. He also went on to undertake the Kitchen Executive Trainee Program from Welcomgroup Management Institute, Gurgaon.
