Nishesh Seth has been appointed as the Executive Chef at Le Meridien Goa, Calangute. He has been with the hotel since its pre-opening phase and is credited for his creativity and innovation in conceptualizing the five food & beverage outlets at the hotel. He brings with him over twelve years of culinary experience & expertise in managing operations, having worked in different cities with Indian & International hotel chains. Before joining Le Meridien Goa, Calangute his earlier assignment was as the Executive Sous Chef at Shangri-La, Bengaluru. He has a keen interest in sustainable culinary practices, sourcing ingredients locally, reinterpreting classic western dishes with a modern local twist and in heritage of world cuisine.
In his current role, he is responsible for introducing new concepts, training & nurturing talent, ensuring standards and effective management of kitchen operations.
He graduated from Institute of Hotel Management Mumbai and started his career as a commis and later graduated as Management Trainee with Taj Hotels Resorts & Palaces in Delhi. He spent a large part of his career with the Taj group and worked in various capacities. He has worked at both leisure as well as city hotels having spent time in New Delhi, Jaipur, Jodhpur, Gwalior, Mumbai, Srinagar, Bangalore and now in Goa.
When he is not working, he enjoys Bollywood movies, cycling and spending time with his daughter who inspires him.His passion for learning about cuisines and pushing the envelope for creating outstanding dining experiences is legendary. Patrons and media alike have adored him for his creativity and infectious energy.
