SITUATED IN the heart of Delhi, Bombay Brasserie (Owned by K Hospitality) launched with a promise to take through a culinary journey of India. Bombay Brasserie has carried forward its journey with outlets in Bangalore, Mumbai, Chennai, Kolkata, and Pune with all day dining from 12 to 12 and now, launched its 8th outlet at Connaught Place.
From the range of food, drinks to the cosy interior, everything comes with a fusion yet keeping it very simple and subtle. According to Shikha Nath, Culinary and Brand Director of Bombay Brasserie, the brand aims towards bringing the young generation closer to the Indian platter and cuisine. She has, over the decades, successfully set up and managed restaurants across different formats, and also leads its Global Franchising arm, identifying people and companies with the exact fit to expand market share with skill, experience and foresight.
A mélange of unique ingredients sourced from the far corners of the country, hand-picked from local farms and suppliers which lend the menu its uniqueness. Nath has altogether introduced five new dishes at the Delhi outlet, keeping the bestsellers from the other outlets intact. “Bombay Brasserie focuses on flavours that have never been tried before, twisting old-school recipes to suit today’s tastes. We use regionally-sourced ingredients, like Aam Papad from Amritsar, Kashundi from Bengal and Em-ma from Shillong. After much research and trial, the menu showcases ingredients from across India that are completely unique. Your culinary journey begins here, at Bombay Brasserie,” she adds.
Talking about the interiors, the white wall, reflecting the key ingredients from all the state of India itself looks like a map that one can follow. With the concept of ‘A traveller never reaches his destination’ the designing is done with a pinch of traveller instincts. A section where the specially designed recipes are framed is an eye catcher for many.
The bar at Bombay Brasserie - the Patiala Bar – is one of the major highlights. Old favourites from across cultures and countries comfortably sit alongside refreshing new brews. The Pauwa Cocktails that is 180 ml of desi concoctions, served up in Pauwa, or quarter bottle is perfectly paired with the right Chakhna. Some of them like Go Goa Gone and Kollywood Pop is a must try.
It has also introduced the Ingredient Bar where they are offering rare ingredients for sale, sourced from the length and breadth of the country. From the lush coconut farms of Tamil Nadu to Pink Salt source from the salt mines of the Himalayas, each of the merchandise is offered for sale which is claimed to be handpicked straight from the source. The product includes Himalayan Pink Salt, Beetroot Powder, Organic Coconut Sugar and Cassava Flour.
Bombay Brasserie Connaught Place is franchised to Josnika Food & Beverages Private Limited which is owned by Partha Ghosh. The brand also plans to open two more outlets in Mumbai and Lucknow in the coming months.
