Drive to your ‘Destination’ wedding: Chef Arun Sundararaj

The big fat Indian wedding has not gone on a diet! Weddings continued as a lot of people in these past three months have done zoom weddings. Now the time is coming to continue with the celebrations in the right numbers, even if twice.

Chef Arun Sundararaj said, “Of course the scale has changed, it has become smaller. What we really need to do is to realign our business model to look at the small as the new big. There are still some people, parents who would want a large spread to accommodate a lot of people. There is a simple solution to that if at all you want to do a 100-cover wedding, so you do it twice. You do 50 covers today, and 50 covers tomorrow. Catering sales teams now have to start innovating.”

The Executive Chef of Taj Mahal Hotel, New Delhi – Chef Sundararaj was speaking at the recently organised BW HOTELIER Breaking The Pandemic WebBlast: 'The Future Of My Plate’.

He further added that India has huge outbound numbers, people went to Thailand, Phuket for destination weddings, for now, that has stopped. This is the time when we can convert that chunk of business to the Indian market. For weddings, there should be a place looked for where people can just drive down. So, for example, if one stays in Delhi, would probably do a wedding in Corbett, or do a wedding in Jaipur because it is at a drivable distance.

He concluded saying that hotels are opening in Gurgaon and one can see that clients who have had their wedding pushed back or moved forward are now looking at having celebrations in small segments, by doing a 50-cover wedding in one room.
