SEEING HAPPY and satisfied faces after savoring the culinary is what makes Chef Alok Anand's day. He has been recently appointed as an Executive chef at JW Marriot, Kolkata. He likes to prepare exceptional food and seasons his creation with love of cooking.
Speaking to BW Hotelier, Anand began by sharing about his experience with JW Marriott Kolkata, "I am loving the buzzing food and beverage operations here. With a young and energetic team, together we keep creating unique dishes regularly. Kolkata loves its food and is not easy to impress, but it has been a pleasure to have people here appreciate our food so much," he said.
Anand believes in putting his heart and soul in whatever work he does and prefers to do things which makes him happy and satisfied. "I was always given total freedom to pursue whatever I choose to do, and though it may seem like a perfect way to move ahead- I always had the responsibility of performing at my field," Anand said.
Prior to joining JW Marriott in Kolkata, Anand has worked with the Oberoi Group at their various units like Oberoi Bombay, New Delhi, Raj Vilas in Jaipur and Udaivilas in Udaipur. After which he joined JW Marriott Mumbai and then The Imperial New Delhi. He then began his stint with the Taj Group with Taj Palace Hotel, New Delhi & Taj Coromandel, Chennai.
Anand wishes to have a cross functional team at JW Marriott, Kolkata and is training his team members for the same. "The city has accepted this hotel with open arms and we shall strive to maintain the position of being number one in the city," he expressed.
When asked how Anand is making his desserts standout in a city famous for its sweets he said, "We offer a large selection of desserts including sugar free and eggless desserts. Bengalis love their sweet, and thus it is imperative we give them top quality dessert varieties. We try to infuse local flavours in international desserts, to keep the special touch from the city."
Speaking about the future plans, Anand shared," at JW Marriott Kolkata, we are looking forward to open two other outlets, which the city has never witnessed before. It is a challenge to match the footfall at JW Kitchen, but we aim to surpass it with the upcoming outlets," he said.
