The Imperial New Delhi Organises ‘Clash of The Titans’ at Daniell’s tavern to showcase Dilli ka Swaad and Lucknowi Andaaz

THE GANGA-Jamuni tehzeeb-enriched Lucknowi cuisine and the Delhi cuisine are rarely differentiated these days. The Imperial New Delhi took a beautiful initiative, ‘Clash of the Titans’ to showcase the food cultures from the broth of the Mughals and The Nawabs. Chef Ved Prakash and Chef Mirza Munnawar Baig, the culinary titans at The Imperial are presenting a confluence of Indian culinary heritage, at Daniell’s Tavern from 17 -24 November 2018.

The menus by both the chefs feature a perfect ensemble of hand-picked traditional favorites from Delhi and Lucknow.  Dishes like Parda Paneer, Gucchi Musallam and Dum ka Kukkad will be served from the platter of Chef Ved’s, whereas, Chef Mirza’s platter consists of dishes like Chakundar aur Ramdana ki Tikki, Mahi Nazakat and Jhinga Masala.  

An insight on the chefs surfaces Chef Mirza as the fourth generation of Khansama from Lucknow. His forefathers used to work with Nawabs of Awadh and their gharanas. He presents in this menu traditional kebabs like Kakori, Galouti along with the all-time famous Biryanis. Mirza has generously used his own blend of spices which are prominent in his recipes. Throwing light on Chef Ved’s legacy, his grandfather used to own an eatery in Old Dilli at the time of independence, famous for curries like Paya Shorba and Purani Dilli Ka Mutton Korma. He, therefore, brings in this menu the same flavors inspired by his grandfather’s collection as memoirs from his childhood, straight from the heart of Dilli. His spice levels are in between medium to high and his curries have a velvety texture, for an unforgettable dining experience.

According to Chef Mirza, Lucknowi cuisine is more aromatic and rich whereas the Delhi cuisine dominates the taste of the main ingredient used. “Because the availability of any area-specific is not hard these days, people have mixed the cultures together. The main purpose of this festival is to educate the people about the two different cuisines,” Chef told us.
