With more than 30 traditional vegetarian dishes and delicious payasams, Grand Hyatt Kochi Bolgatty offers Grand Onam Sadhya takeaway curated by Chef M. Prasad.
“Onam Sadhya is an emotion and not just a feast. This popular sit-down lunch brings family and friends together. Traditionally, the elaborate cooking style of sadhya served large extended families. However, the city is home to compact families who love to celebrate the grand feasting and that’s how we came up with the concept of sadhya takeaway that serves 4 adults,” said Chef M. Prasad.
On any personal twist given to the dishes and payasams, Chef Prasad shared that the team of 60 Malayali chefs have mastered the traditional cooking methods to retain the authenticity of the cuisine. "Starting from the masala powders to ada (rice flakes) for payasam, each ingredient for this sadhya is made in-house to guarantee the authenticity."
He continues, "Number of payasams determine the grandness of Sadhya. We have five payasams in which two paysasams are combined into one. Keeping in mind that it would be hard for the guest to consume two jaggery-based payasams, we have combined Pazham Pradhaman and Parippu Pradhaman into Pazham Parippu Pradhaman."
The takeaway is perfect for small and large groups of friends and families, to savour the sadhya at home. Keeping in mind the safety and wellbeing of the guests, the feast has been hygienically packed in eco-friendly packaging.
"The hygiene manager at the hotel overlooks the enhanced food safety and hygiene protocols. She inspects the quality of materials received and performs regular audits of standard hygiene measure. The eco-friendly containers are thoughtfully procured so that the dishes are in perfect condition before serving. The takeaway box will have 33 packed delicacies," concludes Chef Prasad.
