Nestled in the heart of Morjim, YAAR is the brainchild of renowned mixologist Chetan Gangan, a Michelin-star bartender, and entrepreneur Vijay K Patel. Together, they have created an inviting space where guests can immerse themselves in a vibrant atmosphere, enjoy delectable dishes, and sip on innovative cocktails crafted with love and creativity.

Gangan began his journey in the bustling bar scene of Bombay, starting at the prestigious Hakkasan. "I remember my first job there, cleaning glasses and ensuring the bar was presentable. It was the foundation that sparked my love for mixology," Gangan recalls. His path took him through various bars, including the first speakeasy in Mumbai, where he honed his craft and showcased his talent in competitions. One of his standout creations earned him recognition and opened doors to more prestigious roles in the industry.

Gangan's journey led him to participate in the Bacardi Legacy competition, where he developed cocktails that celebrated Indian flavours, like the Maverick and the famed Chai Negroni. "Each cocktail tells a story," he shares. "At YAAR, we aim to elevate the cocktail experience by infusing Indian ingredients into our drinks, making every sip a celebration of our heritage."

Patel shares a humble background from Andheri East, brings a wealth of business acumen to the partnership. After a series of ventures, including transforming a property into a successful Zostel in Goa, he saw the potential for a cocktail scene that harmonises with the laid-back lifestyle of the region. "When I reached out to Chetan to discuss my vision for YAAR, I knew we could create something truly special together," Patel explains. "We wanted to fill the gap for a place where people could enjoy great food and drinks in a vibrant setting."

At YAAR, the culinary menu is designed to captivate every palate, featuring a range of gourmet burgers, small plates, and hearty main courses. Guests can indulge in unique offerings like the Korean Fried Chicken, accompanied by an in-house spicy sauce, or savour the comforting flavours of the Kala Mutton Keema Pav, topped with a perfectly fried egg. Each dish is thoughtfully prepared to highlight local ingredients and seasonal produce, showcasing the richness of Goan cuisine.

The cocktail menu is a testament to Gangan's innovative spirit and expertise as a Michelin-star bartender. Featuring signature drinks that reflect the essence of Indian flavours, guests can savour creations like the Chai Negroni and the inventive Karaganda cocktail. "We focus on in-house fermentation and seasonal flavours, ensuring that our offerings are not only delicious but also sustainable," he notes.
With a sprawling 3,000 sq ft space that includes an outdoor island bar, an indoor dance floor known as the Spoiler Room, and areas for performances and events, It is designed to foster a sense of belonging. "We envision a place where everyone feels welcome, whether you're here with friends, on a date, or exploring solo," Patel adds. "It’s about creating memorable experiences and building a community around shared passions."

At YAAR, guests can look forward to engaging events, including open mic nights, pool parties, and community mixers, as well as interactive experiences like cocktail-making classes. "We want our guests to feel the freedom to express themselves and enjoy the vibrant atmosphere of Goa," Gangan emphasises.

In line with their commitment to sustainability, YAAR sources ingredients from local markets and emphasises natural flavours. Gangan and Patel believe in the power of storytelling through food and drink, changing the menu every 15 days to reflect seasonal ingredients and keep the experience fresh and exciting.
