THE SURYAA New Delhi Appointed Pankaj Shah as its new Senior Executive Sous Chef. Jha, who specialises in Indian kitchen, is also skilled in Asian, Continental and Italian cuisine as well as butchery and bakery, according to a press release issued by the hotel. Jha bring with him almost 17 years of experience in hospitality kitchens.
He began his career as a management trainee with Carlson Rezidor (Asia Pacific) group and was with the group for more than 12 years.
Prior to joining The Suryaa, New Delhi, Jha was associated with Radisson Blu Marina Connaught Place for more than five years. He was involved with the pre-opening of four ‘The Great Kebab Factory’ outlets with Radisson hotels in different parts of India and has worked as pre-opening chef of the Radisson hotels in Indore and Pune.
His expertise include menu planning, pre-opening, recipe costing, training leadership skill, food and beverage conceptualisation and cost control through better supply chain and yield management.
