Michelin-starred chef Vineet Bhatia mentored Ziya opens at The Oberoi, Gurgaon

A new culinary destination celebrating India's diverse flavours

Oberoi Hotels & Resorts has announced the opening of Ziya at The Oberoi, Gurgaon. Mentored by Michelin-starred Chef Vineet Bhatia, Ziya celebrates the rich and varied culinary heritage of India, from Kashmir to Kerala, Goa to Bengal, all imbued with Chef Bhatia’s signature modern twist. The name Ziya meaning splendour and shine, epitomises the restaurant's dedication to excellence in dining.

Chef Vineet Bhatia made history in 2001 as the first chef of Indian origin to receive the Michelin star for Indian cuisine. A distinguished alumnus of The Oberoi Centre of Learning and Development, Chef Bhatia has established award-winning restaurants in London, Switzerland and the Middle East. He has also gained significant recognition on television, serving as a judge on Netflix’s The Final Table and Master Chef India. In addition to Ziya at The Oberoi, Gurgaon, Chef Vineet Bhatia mentors Ziya at The Oberoi, Mumbai, and Dhilli at The Oberoi, New Delhi, hence solidifying the premier culinary landscape in India.

Ziya at The Oberoi, Gurgaon, presents a modern Indian dining experience designed by Architecture Discipline. The restaurant seamlessly blends traditional elegance with contemporary flair, featuring high ceilings, reflective steel, and glass elements that echo the hotel’s distinctive architecture. The entrance, adorned with a visually striking fire-fused glass against an old timber pattern, sets an inviting tone. At the heart of the restaurant is a monumental communal table beautifully designed and crafted with meticulous attention to detail. Nestled arched pods define seating areas, complemented by caramelised glass table tops on brass supports. Hand-formed glass sconces and art-deco-inspired chandeliers add a touch of sophistication, creating a dynamic ambience that merges past charm with future elegance. 

The menu at Ziya offers a wide array of dishes inspired by the Indian subcontinent, with a nod to Gurgaon's cosmopolitan vibe. Chef Vineet Bhatia’s innovative flair shines through in the reimagined Indian classics. The a la carte menu includes palate pleasers, starters, main courses, heritage bowls and desserts. Ingredients are seasonal, locally sourced, and emphasise sustainable, organic, premium quality produce. The extraordinary cocktail menu and unique experiential tea service complete the dining experience with timeless elegance. 

Some of the signature dishes by Chef Vineet Bhatia include Aloo Toffee, Ghee Roast Lamb, Pan Grilled Sambhar Fish, and Curry Leaf Tofu. For dessert, indulge in the Kulfi Falooda Cheesecake or The Ziya Hug. The cocktails at Ziya reflect the restaurant's philosophy, drawing inspiration from indigenous ingredients. Signature cocktails like the Paan Royale, Swarnam Sour, and Royal Botanica elevate the dining experience. On offer is also a unique tea experience with signature Newby blends such as Valley of Roses and Chanda.
