"LANGUAGE IS my life obstacle, but that does not affect my work," says Sun Wenlin, Sous Chef at Hyatt Regency Chennai. Wenlin is a Mandarin-speaking chef who heads a Chinese restaurant called Stix with the help of a translator app.
Wenlin hails from Shandong Region in China and has almost 14 years of experience in the field of Chinese cuisine. He has worked for most of his tenure in Beijing and specializes in the wok tossed cooking method.
Speaking about his Seafood Sensation festival to BW Hotelier Wenlin says, "It’s almost two-and-a-half years now and I am used to this city, Chennai welcomes you with open arms. People here love to eat spicy food. Stix as a restaurant is known for Hawker styled Sichuanese flavours so I have decided to keep that flavours to my seafood festival as well. Sichuanese and spicy that’s what our guests like," he says.
"I believe in fresh seafood when it comes to my cooking style. Chennai is the hub for seafood and their fish markets have different varieties every day. We want to give an authentic hawker styled experience to our guests which is the theme of Stix as a restaurant," he added.
Wenlin says he doesn't like to talk much but makes delicious food instead. Asking about the idea behind starting a venture in Chennai, Wenlin says "firstly it was Hyatt who offered me to come to India and work here. Also Chinese cuisine is something that everyone has a palate for. I wanted to explore more and this was a perfect chance to come and work out of the country and offer authentic taste to guests," he says.
The Chef Wenlin believes that good team consciousness and serious attitude are his biggest characteristics. He has an adept in meringue shrimp, a braise in soy sauce meat and squirrel fish.
