DLF Cyber Hub Gurgaon Welcomes The Bombaykery

RECENTLY THE Bombaykery opened its doors at the DLF Cyber Hub, Gurgaon - A self-funded dream project that took shape in October 2015 as a Cloud-Bakery & Pop-Up. Owned and managed by the team of trio Mitali Sahani, Karan Sahani and Manhar Sabharwal. The outlet is soon to adopt the park adjoining its outlet serving up freshly baked cookies and gourmet coffee. BW Hotelier caught up with Karan Sahani to know more about the idea behind this new comer in town and journey so-far.

Cherishing the bakery’s growth over the last 20 odd months, Sahani said, “The thought was to start with a delivery and pop-up model that catered to Gurgaon, Central & South Delhi. With the initial investment of Rs 30-35 lakh we started off with a cloud kitchen of only 1,000 sq. ft. which is now over 3,000 sq. ft. multi department kitchen. We started off with a team of four and are now close to 74 right now. The business has achieved over 200 per cent growth over the last 20 months”

Sahani believed in getting into the market with less investment and a good reach. “What really helped us in the marketing were the pop-ups, besides social media. Though pop-ups at these fests such as Grub or Palate Fest are expensive, it gives you a good crowd and eye balls,” he stated.

Speaking about the location, Sahani added, “Cyber Hub is the best F&B integrated destination in the country. We are the only brand which is having its first outlet in Cyber Hub. Its unique in its own way, it’s small and cozy, yet distinct.” Bombaykery also delivers across Gurgaon, Central & South Delhi.

The menu revolves around bite-size desserts & savouries serving up a variety of flavours & textures with a mix of French & American baking techniques. The quality of taste is taken care of by Mitali Sahani who has incorporated her culinary training at International Culinary Center, New York and has worked under Dominique Ansel (the man behind the cronut).

Some of their trademarks are Hazelnut Krispy Krunch, Nutella Seasalt Cookie, Belgian Chocolate Champagne Fudge and Salted Caramel Popcorn Cupcake. Bombaykery also started the savory section where they sell the essence of Bombay like Vada Pao Bomb, Chicken Keema Pao Bombay and Bombay Masala Croissant and now venturing into breads.

Having received 4.9 rating in Zomato for over 10 months at a stretch, Bombaykery is planning to spread its reach in Delhi and other cities soon. “Currently we are looking at Central or South Delhi. We are getting lot of franchise calls but we don’t want to lose our soul ownership,” says Sahani.
