Speaking at the recently held BW HOTELIER WebBlast, 'The Future Of My Plate’ Chef Rohit Gambhir, Executive Chef, The Oberoi, New Delhi, said that these are unprecedented times where technology and digital platforms will influence.
He started by saying that at the end of the day what a server or any of them was carrying was emotion and a feeling. He feels the guest today will understand that this is the need of the hour and if they are doing their things right it is the emotion and it is the feeling that will translate for the guest to experience that there is genuine care involved.
“I think there are quite a few things that are already beginning to move in and there are quite a few things that are already out. This journey of change will continue until the mystery of this pandemic unfolds. Apart from the regular things that are staring at us in our faces is whether it is the mask and the gloves along with the sanitizers, digital menus and QR codes are something that is going to come in, in a big way. The digital platform or technology I think will get elevated to a different level altogether. All of us will need to align, absorb and embrace, if not educate ourselves on these parameters,” he stated.
According to him some of the things like food delivery platforms are already growing and will continue to keep growing post the lockdown. Even once the lockdown is over, he thinks the food deliveries or the packed orders are here to stay. He also feels that there will be a certain percentage of people who would be more comfortable doing takeaways and that will continue, he hopes and he is pretty sure that with these takeaways, they will get to see more improved and refined biodegradable food packaging, coming in a bigger way.
He added “Another thing that I think will happen is that the branded products will gain a bigger share of the market. Organic food, although to a slightly lesser degree but also will come in. Organic food has its limitations, whether it is the availability or whether it is for cost reasons, it will move up but not as significantly as other branded products.”
“We will see more conscious mindful eating, no fast foods, healthy food, immunity-boosting foods, vegan food, all will gain a bigger market share”, concluded Chef Gambhir.
