'Chennai Has Acknowledged my Style of Food'

BORN AND brought up in Italy, Mauro Ferrari a Chef cum Entrepreneur and a Sommelier was fascinated towards food since childhood. Barely at the age of 10, he told his father that he wanted to become a chef. Ferrari presently works at the Hyatt Regency Chennai's signature Italian restaurant Focaccia.

"I came here last year in May and it has been a fantastic journey. My tenure has expanded to even Kolkata and Kathmandu where I had gone to showcase my skills and explore the beautiful cities," he told us.

According to Ferrari he doesn't find language as a barrier and he communicates with his customers in English to know their feedback, "Guests in Chennai are quite open to try something new in fact one of the guests told me 'finally we get some original Italian Flavours and no fusion. Your food smells so fresh and tastes so Italian,' Chennai has acknowledged my style of Food," he said. 

Asking about the idea behind 'The Drama Chef' a live act everyday by Chef at Focaccia. Where he prepares all pasta’s from Scratch, he said, "Italy is known for its art, theater, food, music and that’s what I would like to bring. Authenticity in food and showcasing it with our culture makes the best combination."

Speaking about how Chennai is embracing Italian Food, Ferrari said  people in Chennai love Italian food but it is important for him to give them authentic taste in his food. "I do many cooking classes and also Outdoor Caterings for special events. I have always heard great reviews from my guests. I am sure they will love the little surprises I have for them at my Kitchen," Ferrari explained. 

Chef Ferrari believes in giving a complete experience to his guest. He plans to enthrall his guest for all the festivities coming up this year. His 18 year old twins are qualifying at a hotel management school and getting set to follow in their father’s footsteps.
