Theos Aims to be Rs 100 Crores Company by 2020

TO SATISFY the sweet tooth of the Delhiites, Theos – Patisserie and chocolaterie has recently opened its branch in the Sangam Courtyard, Delhi. Being a brain child of Chef Guarav Wadhwa, Theos started from a very small basement garage in Noida. Today the cafe stands with a strong 100 member team preparing and serving over 600 items and dishes to its Niche clientele.  Completing its 10 years of operation, Theos is looking forward to be a Rs 100 crore company by 2020.

For Wadhwa, it was in the year 2000 that he decided to make his hobby cooking into his profession. He is the Culinary Head with Graduation in Hotel Management from Institute of Hotel Management (IHM Pusa). Wadhwa took the challenge of heading the Bakery and Confectionery Department  at the Taj Connemara Chennai, during his tenure he transformed the traditional working style of Bakery and Confectionery to a more contemporary, modern and stylish form.

“I choose bakery and pastry because of its uniqueness. Pastries should not only taste good but should look good as well. For me it is an art which needs an adequate knowledge of skills and techniques.  I have curated the whole menu of Theos and every day we are experimenting with something new.” Wadhwa said while introducing his newly curated Chocolate Rasmalai and Banana Rum Cheese Cake to us.

According to Wadhwa the USP of Theos lies in its quality keeping the roots of the dishes intact. “We ensure the food & drinks we serve meet the highest standards of quality, freshness and seasonality by combining modern, creative as well as traditional styles of cooking & baking,” he said.

Wadhwa who started his career at the mere age of 22, loves to travel and keeps visiting abroad for his studies and research work. “In India, especially the metro cities I have seen a growing graph of F&B industry. There is a great scope in it. But, if I compare it with the global portfolio, then we must accelerate. In Singapore 80 per cent of the population has the culture for eating out whereas it’s opposite in India,” he added.

In 2010 Theos expanded laterally with the opening of The Classic Italian Lounge in the form of Theos- Café & Lounge. Wadhwa is looking forward to expand the fine dining family restaurant chain to more locations. “I am very choosy about the locations. Many of the locations in Delhi and NCR are in the pipelines,” he concluded.
