Located in North Goa amidst the serene countryside with lush paddy plantations, this 35-seater restaurant & bistro bar serving Mediterranean, Western & Seafood cuisine is perfect for a relaxing meal with friends and family, while the special cabana seating serves as a romantic hideaway. With simple and elegant bird cages, yellow lighting, white drapes, candle lit chandeliers and cool breeze, the ambience of the restaurant lends itself to a special Mediterranean vibe.
Executive Sous Chef Siddharth Noronha leads the kitchen that features a diverse menu and modern renditions of classic and stylish food dishes from Italy, France, Turkey and Greece, promising to mesmerize guests with every dish. One may also choose exquisite culinary delights from the “Daily Black Board” menu featuring the soup of the day, lovely main course and freshly caught seafood specials. The carte du jour highlights an array of scrumptious tapas, paellas, steak and frites from France, Seafood in Sicilian style Frito-Misto with Italian lime and freshly cut parsley with salad on the side topped with fisherman sauce. A must try is the Gambas Aglio served with Thai chilli and freshly handpicked herbs from our herb garden guests can also enjoy a delectable dessert assortment from the striking and rustic Little Red Cupboard at the outlet.

Ganapathy Mallya, Food & Beverage Director, Novotel Goa Resort & Spa said, “Dishes are sourced from a thirty kilometre radius around the resort and features locally made international cheeses, fresh herbs from our own garden, organic vegetables and greens sourced from Pallavi farms, meat and chicken from sensitive vendors and fish from Peter Saldana's trawler in Mandovi. Menu items are served family style for serving two to four people in beautiful handmade wooden trays with an array of accompaniments. Vero Cibo also offers world-class wines, beers and spirits beautifully complemented by signature cocktails.”
Open seven days a week, the restaurant has curated a unique breakfast buffet served from 7.30 a.m. to 10.30 a.m., and a special dinner menu from 7.30 p.m. to 11 p.m. Between Thursday to Sunday, the outlet will also serve gourmet breakfast to Platinum and Gold loyalty members of AccorHotels, VIP’s and guests staying in the Prestige Suites at the hotel. Between 5 and 7 pm the restaurant will have “Happy Hours” where one can pick up a “Buy One Get One Free” offer on drinks and a 15 % discount on appetizers. Each weekend the restaurant would have a BBQ station with family style service and portions offering platters. During winters, Vero Cibo will feature two-piece band performances with acoustic music on weekends.
